Vegetarians and vegans don’t have to worry about the food quality because they are not eating anything we consider “slimy”, “greasy”, “sour”, “off the wall”, “dirty”, etc. in the same way. Also, no animal products are allowed. In fact, veganism is like a religion to some people.
